Saucy Chops

Not even going to apologize. Starting to feel like ya’ll wouldn’t believe me anymore anyway. I am sooooo neglectful.

I WILL promise to try and catch up on all that I have been cooking and baking (and eating). I have been taking pictures all along the way and I have a few recipes added to my ‘Favorites’ and this is one of them.

I have had so many people ask for the recipe I felt it was my duty to share on here…and then I can just direct everyone here instead of writing it out every time. Yup. I’m just lazy. 🙂

 

Ingredients:

6-8 boneless pork chops (I prefer center cut)

1/2 cup brown sugar

1/2 cup onion, chopped VERY fine or pulverized in a food processor

1/2 cup EACH: ketchup, BBq sauce, french OR catalina salad dressing, honey

bacon, chopped (or like me….cut up using kitchen scissors. SO much easier)

sprinkle of garlic powder and dried chilis (optional)

 

Directions:

Start by bringing your chops to room temp and adding some S&P

In a large skillet (I like my cast iron) fry up bacon bits. Scoop out bacon with a slotted spoon leaving bacon fat in the skillet. Over medium heat brown pork chops in the fat (pig on pig action!), 2-3 minutes per side.

In a small bowl combine remaining ingredients and pour over chops.

Bring to a boil. Reduce heat and simmer 5-8 minutes (or until a thermometer reads 145 degrees). Let stand 5 minutes before serving.

I have never tried this but the original recipe states it freezes very well. We never have leftovers to test this theory.

This has become one of our go-to recipes. I love it with creamy whipped potatoes and sugar snap peas (cooked with garlic and bacon fat) but it would be delish served on an old slipper with a side of nails.
